Hatted chef Joshua Mason to open Ciel at Infinity Park, Norwest development
Acclaimed hatted chef Joshua Mason has committed to opening a 300 sqm rooftop restaurant space at the Infinity Park masterplanned community in Sydney’s Norwest.
Taking half a floor of the seven-storey commercial building at Infinity Park, Infinity Commercial, the restaurant, to be called Ciel, a translation of the French word for sky, will seat 120 patrons and will feature indoor and outdoor dining as well as a private room for group bookings.
The restaurant is a major drawcard for the Hills rapidly expanding growth and dining scene and will give the commercial tenants and locals a new experience in a state of the art facility offering dining that hasn't been showcased before in the north west.
Haitchin Property Group’s General Manager, Robert Tasevski, said diners will enjoy spectacular rooftop views from the restaurant – the bright lights of Sydney skyline by night or the picturesque golf greens of the neighbouring Castle Hill Country Club by day.

Ciel chef Joshua Mason said diners can expect something extraordinary at his new Ciel restaurant.
"A wood fired inspired dining experience honouring the south of France and the light finesse of the Mediterranean cuisine. The custom-made grill is built in Barcelona and will allow my chefs to produce authentic flavoured dishes kissed by fire," Mason said.
“Ciel is inspired by my Sicilian heritage, celebrating a seafood-forward menu. There will be an ice-well at the front of the restaurant featuring an array of fresh oysters, lobsters, crustaceans and Australian fish. Guests will be able to sit at the bar, featuring a striking green stone bar imported from Argentina and enjoy a shucked oyster and a stunning cocktail."
Currently under construction, the seven-storey commercial tower topped out last week, with the construction team reaching the highest level of the building.
The restaurant is the last tenancy to lease with all other 95 commercial suites quickly selling out by November 2021.
PRD Norwest CEO David Inkster said Infinity Park is one of the most premium mixed-use communities in Norwest.
“With an excellent array of amenities complementing Joshua Mason’s Ciel restaurant, the project has already seen strong demand with local downsizers not wanting to miss out on the opportunity to live here,” Inkster said.
When completed in mid-2025, Infinity Park will comprise 287 apartments across three Turner-designed residential buildings. A 25-storey tower, Marque, along with two five-storey buildings, marketed as Alpha and Omega, will comprise the most premium two and three-bedroom apartments in the precinct.
Haitchin commenced construction on the commercial tower in September 2022, which also features a ground level cafe and a fitness retailer.
Situated on one of the highest points of Norwest, Infinity Park will offer The Hills District’s most elevated panoramic views and will be Norwest’s greenest residential community, centred by a resort-inspired, tropical lagoon-style swimming pool – the largest in the suburb.
The residential component of Infinity Park is due for completion in mid-2025 with the commercial building completing earlier in April 2025.
